Yes, you've read the heading correctly, this is a post about fast food and how you can make it in your own kitchen. When we speak about fast food, we are not speaking about food that comes from a fast food chain of restaurants. What we are talking about here, is food that you can prepare, quickly and easily in your own home.
 
 
 
When you begin following the Atkins® way of eating, you will find that there is a huge variety of foods that can be eaten on the diet and more over, an almost endless choice of recipes that your own personal menu can be made up from. And because it is your menu, you can make it as interesting, elaborate or as simple as you choose.
"Where is this fast food you promised, I've been waiting an age now and still now sign of it!" Don't worry, it is on its way to you post haste, just sit back and enjoy the post.
Here are a few recipes that will allow you to cook a hearty breakfast or lunch or dinner in record time. This addresses two issues. Firstly it allows you to have more time in your day whilst still eating properly and two it prevents you from snacking on empty carbs from a vending machine. So, let us begin at the beginning, with breakfast.
Breakfast: The Humble Omelette
The omelette is a super food and it is also super quick to prepare and make. There are countless combinations of fillings that you can put into your omelette and ultimately this will be dictated by you.The base ingredient for an omelette is eggs. The basic utensils required to make an omelette are, a pan and a spatula. So, without further ado, here is one of my own personal favorite omelettes, the 3 Cheese Omelette.
Ingredients: per 1 serving
  • 2 large eggs (free range)
  • 1/2 tbsp of real butter
  • 1/4 cup grated cheddar cheese
  • 1/4 cup crumbled wensleydale cheese
  • 1/4 cup gorgonzola cheese
  • 1/4 tsp salt and pepper
  • some fresh parsley

3 Cheese Omelette
To make the omelette, heat the pan and add the butter. Once the butter is melted the pan is hot enough to add the eggs that you have lightly beaten in a cup. Reduce heat slightly and allow the eggs to cook until almost all of the egg has become solid the whole way through. Add the three types of cheese by sprinkling it over one half of the egg, add salt and pepper for flavor. Just as the cheese is beginning to melt, take your spatula and fold the half of the omelette with no cheese over on top of the half that has the cheese. Gently press down on the folded omelette. Turn off heat and allow omelette to finish cooking or until the cheese has melted to your liking. Garnish with some fresh parsley and transfer to a warm plate and serve. From start to finish, making an omelette like the one described in this recipe will take you no more than 5 minutes. Now that is FAST FOOD
Lunch: A Salad Supreme
The great thing about making a salad for lunch is you can prepare this while your breakfast is cooking. We make this salad in the mornings before leaving the house. Once you have the base ingredients like red wine vinegar/cinder vinegar, olive oil, mixed salad leaf, lettuce, scallion/onion then you can begin adding whatever other ingredients that you feel would make up a tasty salad for you. In the recipe below you will see avocado and cherry tomato. Both of these make any salad wonderful.
Avocado Salad
Ingredients: per 1 serving
  • half a bowl lettuce/mixed leaf salad
  • 1-2 tbsp of olive oil
  • 1 tbsp of red wine vinegar
  • half dozen cherry tomato's
  • 1 tsp dried coriander or 1 tbsp of fresh coriander
  • 1 tsp salt 3 medium scallions (spring onion)
  • 1 ripe avocado

Tasty and Easy Avocado and Tomato Salad
To make the salad, you need to quarter the cherry tomato's and place in a small bowl. Add the vinegar and coriander and salt to the tomato's and allow to marinate. In a larger bowl add the lettuce/salad leaf, spring onion; cube the scooped out avocado and add to the bowl. Mix all together using your hands or a salad spoon. Once everything is roughly mixed, add the contents of the smaller bowl containing the cherry tomato's back into the larger bowl. Drizzle the olive oil over the whole salad and serve or store in a container for later use.
Finally, when you arrive home from a long day and it is time for dinner, getting actual fast food sometimes seems like the simplest option. Stop! You don't need to submit to these cravings. Here is a super quick idea for dinner that is both delicious and filling.
Dinner: Lamb Skewer Kebab
This is so quick and simple to make. You literally stick everything onto a skewer and put it in the oven for 20 - 25 minutes. So, below is the recipe and and ingredients.
Lamb Kebab
Ingredients: per 1 serving
  • 1/4lb lamb mince
  • 3 - 4 button mushrooms
  • 1 medium onion quartered
  • half a bell pepper
  • 3 - 4 cherry tomato's

Lamb Kebab on Skewers!
Okay, this is super quick so pay attention. Roll the mince into meat balls (if you wish to season with salt or a herb of your choice such as dill or coriander feel free). Take your skewer, push a quartered piece of onion onto the skewer, followed by a meat ball, then a cherry tomato, a piece of bell pepper another meat ball and a button mushroom to cap it off. Repeat for as many skewers as you have and place the ingredients on the skewer in whichever order you choose. For a difference you could substitute the mushroom for pieces of aubergine. You could also place chili peppers on the skewer. Be inventive and experiment, it is your Fast Food after all!
